Simple, Sweet Pilgrim Hat Treat

Thanksgiving is known for its tasty food—and lengthy preparation. Cooking for the holiday sometimes begins days in advance: prepping, peeling, baking, brining. It’s all worthwhile and delicious, but wouldn’t it be nice to have a festive dessert that is quick and requires absolutely no cooking or cutting? Enter: pilgrim hat cookies. These adorable treats are simple enough that little ones can help and are perfect for the kids table, a classroom party snack, or just a sweet addition to the dessert table.

You’ll need small peanut butter cups, yellow frosting with a piping tube, and chocolate wafer cookies. If need be, you can substitute any of these ingredients with what you have around or to accommodate allergies. Instead of peanut butter cups, try Rollos or anything similarly shaped. If you don’t use chocolate wafers, use any cookie with a smooth chocolate surface, like striped fudge cookies or Oreo Fudge Crèmes.

Let your peanut butter cups chill in the refrigerator for a bit—they’ll be easier to unwrap and won’t melt in your hand. Squeeze a dab of frosting on the center of the cookie and press a peanut butter cup on it facing upside down (small surface up top). Finally pipe a frosting rim where the chocolate meets the cookie to create a hatband and pipe a small square to make the buckle. Voila! Pop them in the fridge until you’re ready to serve so nothing melts.
